Mitrano, उन्हाळ्यात वाळवणासोबत आणखी काही पाहूण्याची चाहुल लागते आणि मग घरोघरी एक खमंग सुवास दरवळतो तो याच वेगवेगळ्या पद्धतीच्या वेगवेगळ्या चवीच्या लोणच्यांचा. आज मी तुम्हाला माझ्या आईची Recipe दाखवणार आहे.एक्दम Maharashtrian Style खान्देश पद्धतीचं. आईच्या हाताचा लोणचं तर सगळ्यांना आवडता. मला तर खूपच आवडता. आई खूपच छान लोणचं बनवते so मी विचार केला कि तुमहाला पण माझ्या आईच्या हाताचा लोणचं दाखऊया. चला तर मग सुरुवात करुया सगळ्यांच्या आवडत्या कैरीच्या लोणच्याने. बनवूया चटकदार तोंडाला पाणी आणणार चट्पटीत लोणच. History Of Pickle... ?

  • Kairiche Lonche is a Traditional Recipe. Pickles have been around for thousands of years, dating as far back as 2030 BC when cucumbers from their native India were pickled in the Tigris Valley. The word “pickle” comes from the Dutch pekel or northern German pókel, meaning “salt” or “brine,” two very important components in the pickling process. It tastes just awesome. This is a perfect side dish. Any household does have a mango pickle. As this is the season of Summer and in this season all ladies make the Pickle in their house in their way. Today we will make Khandeshi style Pickle Recipe .

Ingredients of Recipe




Ingredients :

  • 7 kg कैऱ्या(7 kg Raw Mango)
  • 350 gm मोहरी डाळ (350 gram Mustard Seeds)
  • 100 gm बड़ी सौंफ(Big Fennel Seeds)
  • 100 gm मीरे(100 gram Black Pepper)
  • 100 gm लवंग(100 gram Cloves)
  • 100 gm जीरे(100 gram Cumin Seeds)
  • 50 gm मोहरी(50 gm Mustard Seeds)
  • 50 gm मेथ्या(50 gm Fenugreek Seeds)
  • 250 gm वाटी हळद(250 gm Turmeric Powder)
  • 400- 500 ग्राम लाल मिरची पावडर(500 gram Red Chili Powder)
  • 1 मोठा चमचा खडा हिंग(1 big spoon Khada Asafoetida)
  • दीड किलो खडा मीठ(1 and half kg Rock Salt)
  • दीड किलो शेंगदाणा तेल (1 and half kg Groundnut Oil)

Procedure

  • On the First day, Wash all the mangos nicely. Dry them and cut them into small pieces. But here I bought 7 Kg cut pieces of Raw Mango from the market so, if you want you can also bring it.
  • Now clean them by using cloth and keep them under the fan for one day.
  • I did this whole process in the morning and kept it the whole night.
  • Next Morning, our Raw Mango are dried nicely and ready to make pickle.
  • Now for Pickle Masala, Heat up the Kadai, add Mohri Dal, and roast on low flame for 5 mins. Remove its moisture don't burn it. Check by using your hand if it's slightly hot then it's done. Remove to a plate and keep aside.
  • In the same way we have to roast all the ingredients. Now add Cloves, Black Pepper, and Cumin Seeds.
  • Roast them nicely till getting slightly hot. Remove this to a plate and keep it aside.
  • Now add Mustard Seeds(Optional) and Fenugreek Seeds. Roast them for a min and remove them from a plate.
  • Here all ingredients are done, cool them completely.
  • Till we will heat up the Oil for Pickle. So, heat the Groundnut Oil nicely.
  • Oil must be enough hot, check by using the hand as shown in the video. Take care it's hot and can burn your hand.
  • Once it's hot keep it aside.
  • Here our Masala is ready, take a grinder jar add all the ingredients and grind it coarsely. Don't make a fine Powder. We want coarse Powder.
  • Our Homemade Pickle Masala is also ready.
  • Now take a large bowl, add Mohri Dal, Homemade Pickle Masala, Turmeric Powder, Red Chilli Powder for color, and Cyrstal Salt. Mix everything properly.
  • If you want you can store this Masala in an airtight container.
  • Now add slightly hot Oil to it. Mix it well. Cover it and rest for at least 4 hours.
  • After 4 hours you can Khaar looks nice. Now add Raw Mangoes to it and mix them nicely. Khaar should coat all the mangoes nicely.
  • You can see in the video how I am doing. Do the same way.
  • Here our Pickle is ready, Cover it and rest at least an hour.
  • After an hour our Pickle is ready. Mix it once nicely and fill it in a Glass Jar or Ceramic Jar.
  • Take a Barni to fill all the Pickle nicely. When it fills half keep that big Mango to it and fill other Pickle.
  • I followed my mother's parampara. She used to do the same.
  • Fill the Pickle nicely, keep some space. Clean the Barni from the outside and cover it using cloth as shown in the video.
  • Watch the whole video till the end. All tips you will get.
  • Here Our Moms Style कैरीचं चटकदार लोणचं is ready.😋
  • After a week it will set nicely and be ready to eat anytime. But I eat it the same day I can't wait I love it so much.😀
  • NOTE : मित्रांनो हे सर्व प्रमाण 7 किलो कैरीच्या प्रमाणे आहे. तुम्ही गरजेप्रमाणे ते कमी - जास्त करा 😊.

TIPS :

  • 1. Dry all the Raw Mango pieces nicely.
  • 2. Always use a Clean and Dry Spoon.
  • 3. For long preservation use Khada Hing.
  • 4. Use Crystal Salt (Khada Namak).
  • 5. Cover the Pickle Barni with a clean cloth.
  • 6. Rest the Pickle Masala(Khaar) for at least 4 hrs.
  • 7. Every day two times a day in the morning and at night mix the Pickle up and down by using a clean spoon.
  • 8. If needed more Oil, then first heat the Oil nicely cool it completely and add it to the Pickle, and mix it well (do this process at next day).
  • 9. Keep the Pickle Barni in an airy room.



How to Serve ?

  • Serve the Pickle after 2-3 days or eat on the same day with chapati, bhakri, or rice.😋
  • कैरीचं लोणचं is the best side dish in everyone's family. For kids tiffin box is the best option.
