Hi Guys, Welcome to ItsMahajan. Friends, Today I am here with a new recipe which is very famous in Maharashtra that is Alu Pan Vadi. There are many names like Alu Vadi in Marathi, Arbi in Hindi, and Colocasia/Taro in English. Alu Leaf is a very hassle-free plant. As, you think that making this recipe is very hard, but guys it is a very simple and tasty snack. Also, we make Curry of this Alu Vadi and it is just awesome. I will upload the Alu Chi Bhaji recipe soon. So, today we will see how to make perfect Crispy Alu Vadi in kitchen ingredients. Ingredients are available in everyone's kitchen so don't worry. History Of Alu Vadi ?
- Alu Vadi has many names like Alu Vadi in Marathi, Arbi in Hindi, and Colocasia/Taro in English. Alu Leaf is a very hassle-free plant.
- According to Wikipedia, Taro (Colocasia esculenta (L.) Schott), also known as eddoe or dasheen, originated in the Bay of Bengal region of Southeast Asia. It was carried by early Polynesians throughout Oceania, where it became a staple food. It is an ancient crop in Asia, being introduced into Japan more than 2500 years ago.
- Taro leaves are an excellent source of ascorbic acid and dietary fiber, and also contain thiamin, riboflavin, iron, phosphorus, zinc, vitamin B6, vitamin C, niacin, potassium, copper, and manganese. In Maharashtra it is very famous, we can make many recipes of it, in Khandesh Aloo Vadi is very famous recipe also, Alu chi Bahji is made by this Vadi. It is very tasty and delicious. Ingredients
- 8-10 Alu Leafs
- 2 Cup Gram Flour/Besan
- 2 tbsp Cumin Seeds
- 1 tbsp Ajwain
- 1 tbsp Aasafoetida (Hing)
- 3-4 Green Chillies
- 1 inch Ginger
- Garlic Cloves
- 1 tbsp Red Chilli Powder
- 1 tbsp Turmeric Powder
- 1 tbsp Coriander Powder
- Chopped Coriander Leaves
- Salt as per taste
- Water
- Oil

Procedure
- First, Wash the Alu Leafs nicely and keep a aside..
- Now for Chili paste, take a Khalbatta add Green Chillies, Cumin Seeds, Ginger, Garlics, Coriander Leaves and Salt.
- Crush finely in Khalbatta, you also can use mixer for it.
- Chili Paste is ready keep it aside..
- Now in a large bowl add Gram Flour/Besan, Cumin Seeds, Prepared Green Chilli Paste, Aasafoetida, Red Chilli Powder, Corainder Powder, Turmeric Powder, Coriander Leaves, Oil and Salt. Combine all the ingrediets nicely.
- Add Water gradually and make a batter(like bhaji), don't make it very loose.
- Now take washed Alu Leafs, apply the batter to Leaf every where nicely, keep another Leaf on it and repeat the same process, keep again another Leaf and repat it. You can keep 2, 3, 4 Leafs but 2 are also sufficient.
- Now roll them nicely and apply some batter on it as shown in the video.
- Here our Rolls are ready.
- Heat up the water in steamer or kadai.
- Grease the plate and keep Alu Rolls on it.
- Keep the plate slowly and steam it for 10-20 mins.
- Once it done, check with knife and cool it completely.
- Here our Alu Rolls are cool, now cut the pieces as shown in the video.
- Finally, Our Crispy Alu Vadi is ready to Serve.😊
- Serve With Some Chutney or Eat as it is.
- NOTE : To avoid icthing in sore, add Jaggery and Tamarind water mixture.
How to Serve ?
- Serve the Alu Vadi with Coconut Chutney , Pudina Chutney, Curd, Chillies or eat as it is.
