It's everyones favourite рдХрд░ंрдЬी. Mag aala na tondala pani. So, today we will make Karanji in very simple way. As, we can make many types of Karanji but I am going to it in Tradtional way so, the stuffing is of Rava Coconut which is very mouthwatering... Karanji is also known as Sanjori. What is рдХрд░ंрдЬी...?
- Gujiya (Hindi: рдЧुрдЬिрдпा), Gughara (Gujarati: ркЧૂркШрк░ા),Pedakiya (Hindi: рдкेрдбाрдХिрдпा), or karanji (Marathi: рдХрд░ंрдЬी) is a sweet deep-fried dumpling, native to the Indian subcontinent, made with suji (semolina) or maida (all purpose flour) stuffed with a mixture of sweetened khoa and dried fruits, and fried in ghee. The earliest mention of gujiya dates back to the 13th century, when a jaggery-honey mixture was covered with wheat flour and was sun-dried.
- As, Karanji is having many names in different regions and are made in many different ways with diffrent stuffing. This Sweet is made in India during Holi and Diwali Festivals... So, today we are going to make our Traditional recipe...
INGREDIENTS :
For Dough :
- 125gm Maida / рдоैрджा - резреирел рдЧ्рд░ॅрдо
- 4 tbsp Ghee / рдоोрд╣рди рд╕ाрдаी рек рдЫोрдЯे рдЪрдордЪे рддूрдк
- Pinch of Salt / рдоीрда
- Oil for frying / рддрд│рдгी рд╕ाрдаी рддेрд▓ рдХिंрд╡ा рддूрдк.
INGREDIENTS :
For Stuffing :
- 100gm Rava / рд░рд╡ा - резрежреж рдЧ्рд░ॅрдо
- 100gm Grated Coconut / рдХिрд╕рд▓ेрд▓े рдЦोрдмрд░ं резрежреж рдЧ्рд░ॅрдо
- 100gm Powdered Sugar / рдкिрдаी рд╕ाрдЦрд░ - резрежреж рдЧ्рд░ॅрдо
- 5-6 Cardamom Seeds / рдЗрд▓ाрдпрдЪी - рек рддे рел
- 25gm Charoli / рдЪाрд░ोрд│ी - реирел рдЧ्рд░ॅрдо
- 50gm Raisins / рдХिрд╕рдоिрд╕ - релреж рдЧ्рд░ॅрдо
- 2 tbsp Poppy Seeds / рдЦрд╕рдЦрд╕ - рджोрди рдЫोрдЯे рдЪрдордЪे
Procedure Video...
PROCESS :
For Stuffing :
- Heat up the Kadai, add Poppy Seeds and saute it well for a min. Remove in a plate..
- Now add 1 tsp Ghee, Rava and saute it for 5-7 mins. Don't burn it.
- Here Rava is roasted, remove it in a plate.
- In same Kadai, add grated Coconut and saute it well for 2-3 mins.
- Remove this also in same plate nad mix well.
- Here our mixture is very hot. Cool it completely.
- Now add Raisins, Charoli and Cardamom Powder. Mix it well.
- Add Powdered sugar and mix it well. Do'nt add Sugar in hot mixture. Frist cool it then only add it.
- Here our Sanjorya/Karanji stuffing is ready. You can store it in a air tight container for a week.
PROCESS :
For Dough :
- Take a parat, add Maida, pinch of Salt and hot Ghee. Mix it well.
- Now add warm water and form a soft dough.
- Here dough is ready, cover it and give rest for 30 mins or more than 1 hour. You can also keep it for 2 hours for best result.
- Here our dough has been rested, now we will make our Crispy Karanji.
- Now take a small ball out of the dough and knead it for a while.
- Roll the ball into shape of Chapati. I like this process because it is time consuming. You can also roll it seprated like puri.
- Now take any lid of container or medium size bowl and make the puri.
- Now take our prepared Rava Stuffing, add 2 tbsp milk to it and mix it well, than stuff the filling in it as shown in the video.
- Apply some water and close the ends of Karanji and give desired shape as shown in the video.
- In same way make all the Karanji. Here Karanji are ready to fry.
- Now heat up the oil/ghee in kadai and leave the Karanji one by one in the oil and fry unitl golen brown.
- Here our all Crispy Diwali Special Karanji are ready...ЁЯШЛ
- NOTE : Don't add milk in whole Rava mixture. Whenever you want to make garam garam Karanji that time only add milk and make it. Remaing Rava mixture/saran keep in a air tight container.
How to Serve ?
- Serve Hot with Diwali Faral or have it as evening snack...
