Today we are going to see Khandeshi वांग्याचे भरीत recipe. Recipe is very very simple and only in 15 mins it is done, in very few ingredients. History Of Baingan Bharta...?
- Baingan Bharta (mashed eggplant) is a dish from the Indian subcontinent. Baingan ka bharta is a part of the cuisine of some Nation States of the Indian subcontinent. It is a vegetarian dish that is prepared by mincing eggplant (baingan) that is grilled over charcoal or direct fire.
- The smoked and mashed eggplant is then mixed with cooked chopped tomato, browned onion, ginger, garlic, cumin, fresh cilantro, chili pepper, and mustard oil or a neutral vegetable oil. Traditionally, the dish is often eaten with flatbread and is also served with rice or raita. In states such as Bihar and Uttar Pradesh, it is served hot with litti or baati.
- In India, Pakistan and Bangladesh, baingan bharta is part of popular cuisine. In India, it is made in various regional styles,with ingredients varying from one region to another.
INGREDIENTS :
- 2 Green Brinjal
- 1 Tomato
- 2 Finely Chopped Onion
- 1 tsp Crushed Garlic-Green Chili (Crushed in Khalbatta)
- 1 tsp Cumin Seeds
- 1 tsp Mustard seeds
- 4 tbsp Peanut Powder
- 1 tbsp Red Chilli Powder
- 1 tbsp Coriander Powder
- 1/2 tsp Turmeric Powder
- Finely Chopped Spring Onion
- Finely Chopped Coriander leaves
- Salt to taste
- Oil

METHOD :
- Wash and dry the brinjal. Make slits in brinjal with the help of knife. You also can prick it.
- This helps the roasting the brinjal evenly.
- Now Rub a little oil all over the brinjal This helps in peeling the skin of roasted brinjal easily.
- Now turn on gas and put the Brinjal,Tomato, Green Chillies on it. Roast the brinjal from all sides.
- Roast the brinjal , Green Chillies and Tomato properly for 3-4 mins.
- When the Brinjal cools down, peel the skin completely.
- Smash the Brinjal,Tomato with fork, masher, knife or in Khalbatta. Here I have used khalbatta.
- Heat up oil in a kadai/pan, add mustard, cumin seeds and asafoetida.
- Add crushed Green Chillies, Chopped Onions, Chopped Ginger, Garlics. Mix well and saute for 3-4 mins.
- Add smashed Brinjal, Spring Onion. Mix it well.
- Add all spices, Red Chili Powder, Turmeric Powder, and Coriander Powder. Mix well.
- Cook it for 2-3 minutes.
- Add roasted Peanut Powder and salt to taste.
- Mix well and cook for about 4-5 minutes.
- Turn off the gas and add coriander leaves.
- Mix well and here our Khnadeshi चमचमीत वांग्याचे भरीत is ready.😋
How to Serve ?
- Serve hot with chapati, jawar, bajra or rice bhakari.😋
- Khandeshi वांग्याचे भरीत recipe is very easy and tasty, try it once. It’s really amazing, mostly with bhakri it goes super… so, I will suggest if you will make it then serve with bhakar only…😊
