Many People don't know about Khandesh Style Cooking. So, basically, Khandesh is Region that includes cities -Dhule, Jalgoan, Nashik, and Nandurbar. Khandesh has a rich cultural and literary heritage. There are many different types of making Vajri, everyone has its own style...But today we will do it in a very easy way and in Khandesh style which I and my family likes...So, Let's StartЁЯСНЁЯСН...Happy watching. :)
History of Vajri/Goat Tripe...?
- The Traditional East Indian Vajri Khudi or Vajadi khudi is a gluten-free Goat Tripe Masala Curry from the East Indians of Bombay, India. Although a lot of the younger generation of East Indian's or Mumbaikar's don’t really like eating tripe. But it tastes Yummy and is more of an acquired taste...
- Tripe is the stomach of ruminant animals such as cattle, sheep, goats, deer, giraffe and many more. Tripe / Vajri is the organ meat from the stomach of goats, sheep, cows and other animals...
- Although tripe or vajri is an acquired taste, but it has the advantage of containing more zinc, selenium, Vitamin B12 and other nutrients that are good for human body. We Should eat this Tripe, it's really good for health...
Ingredients :
- Cooked Vajri/Wajadi
- 3 Onions
- Garlic (Lasun)
- Ginger (Adrak)
- Black Pepper (Miri)
- Cloves (Lavang)
- Star anise (Badishep/Badyan)
- 2/3 Bay Leaves (Tamal Patra/TejhPan)
- Dry Coconut (Khobra)
- Coriander Leaves (Dhaniya)
- 3 tbsb Red Chilli Powder
- 3 tbsb Kala Masala (Special Khandeshi Masala)
- Salt as per Taste
- Oil

Procedure :
Preparation of Special Masala :
- Grind Onions, Black Pepper, Cloves, Garlic, Coconut, Ginger together in Mixer. The paste should be thin and here the Masala is ready ЁЯШЗ.
Process : How to make Vajri Curry ЁЯН▓ ?
- For Boiling the Vajri, Heat up oil in kadai. Add 1 Chopped Onion, 3 tbsp Oil, 1 tbsp Cumin Seeds, 1 tbsp Turmeric Powder and saute for a min.
- Now add 4 cups hot water and washed Vajri. Mix well.
- Add Salt to taste and mix it. Let it cooked for 15 mins.
- After Vajri is cooked heat up Oil in pan/kadai and add our grinded Khada Masala Paste in it and fry it for 3 mins.
- Now add Red Chili Powder and Kala Masala(Special Khandeshi Masala). Fry it for 3mins.
- The colour of the paste should not become dark.
- Finally, add our Cooked Vajri in it and let it cook for 10 mins.
- Here, our Spicy Vajri Masala Curry is ready to eat...ЁЯН╜ЁЯН▓ЁЯШЛ
How to Serve ?
- Serve the Vajri Curry with Bhakri, Chapati, Rice, Onions and Lemon...ЁЯН▓ЁЯШЛЁЯН▓ЁЯШЛ
